Blend the cornflour with a little stock and add to the soup pan with the remaining stock and the sweetcorn. Place broth, creamed corn, soy sauce, Chinese cooking wine, ginger, garlic and cornflour / water mixture in a saucepan over high heat. Bring to boil, then turn down the heat to medium and stir occasionally. Boil a large kettle of water.

Instructions to make Chicken-corn soup:
  1. Shallow fry the chicken and carrots and keep aside
  2. Put some butter in a pan and add in the ginger,garlic and corn kernels. Add up the chicken/carrots, saute well and pour the chicken stock over.
  3. When the mixture comes to boil, add in some diluted corn starch to prepare the thickness of the soup. Add the egg whites carefully on the top with some crushed peppercorns
  4. Serve it warm with croutons/biscuits.

Bring to boil, then turn down the heat to medium and stir occasionally. Boil a large kettle of water. Break the carcass into a big non-stick pan and add the ginger slices, onion and two-thirds of the garlic. Remove chicken breast from the stock and leave to cool for a few minutes then shred. Add corn to stock and bring to the boil over a medium heat.
