The ingredients needed to make Chicken and Corn Soup:
  1. Get 200 gr chicken thigh fillet, cubed
  2. Get 2 garlic, chopped
  3. Prepare 1 tsp oil (I used fermented garlic chicken, but you can use regular oil)
  4. Get 2 eggs
  5. Get 1 can corn
  6. Prepare 1 1/2 cup water (I used the corn can as measurement)
  7. Take 2 tbsp katakuriko + 125 ml water (you can use cornstarch as well)
  8. Get 2 tsp bouillon powder
  9. Make ready 1/2 tsp black pepper

Add the onion to the pan if you are using it, and cook over a low heat until soft. Blend the cornflour with a little stock and add to the soup pan with the remaining stock and the sweetcorn. In a medium stock pot combine stock, cream style corn and chicken. Bring to the boil, reduce heat and add pepper and salt.

Steps to make Chicken and Corn Soup:
  1. Heat oil in a pan. Stir-fry chicken until it's cooked. Add garlic and stir continuously.
  2. Add corn (and the water from the can), then add 1 1/2 water using the can as measurement. Add black pepper and bouillon powder.
  3. Break the eggs and whisk. When the soup is boiling, pour the eggs bit by bit.
  4. Mix katakuriko (potato starch) with water. Pour into the soup and continue stirring until the soup thickens.

In a medium stock pot combine stock, cream style corn and chicken. Bring to the boil, reduce heat and add pepper and salt. In a separate bowl mix the cornflour with water. Place broth, creamed corn, soy sauce, Chinese cooking wine, ginger, garlic and cornflour / water mixture in a saucepan over high heat. Bring to boil, then turn down the heat to medium and stir occasionally.
